A not completely healthy snack

I apologize for the lack of post last week but I was on a wonderful trip in the Spanish mountains. A week of glorious views and trees dripping with delicious oranges, lemons and avocados is enough to inspire any baker so you might be surprised that my first recipe upon returning is rather simple but still inspired by my trip. 




Everywhere we went the shops and markets were filled with delicious nuts, the local lidl had huge barrels of nuts at an unbelievable prices. In discussing this with my fellow travellers we began an exciting discussion of our favourite nut snack which resulted in one very serious question.........

Why does nobody make honey roasted macadamia nuts?

I mean think about it; honey roasted almonds, peanuts and cashews taste amazing when raw almonds, peanuts and cashews taste ok but raw macadamia nuts already taste amazing so what would happen if you add honey roasted crust.......... a taste explosion my friends.



Honey Roasted Macadamia Nuts



400g Macadamia nuts ( or other nut of choice)
2 tbsp Honey
1 tbsp butter
1 tsp Vanilla essence
1/2 tsp cinnamon
1/2 tsp lemon zest
1 tbsp granulated brown sugar
1/4 tsp salt

1 - Preheat your oven to 180'C. Melt together the honey, butter, vanilla essence and cinnamon in the 
     microwave for 45 seconds to a minute.
2 - Add  the nuts and the lemon zest and mix well until everything is evenly covered
3 - Line a baking tray and pour out your nuts evenly


4 - Bake for 5 minutes then mix them around, bake for a further 5 minutes and mix again before 
      baking for a final 3-4 minutes. Remove from the oven and move them to a cool plate
      immediately to stop the cooking process


 5 - When the nuts have cooled slightly pour them into a bowl with the granulated sugar and salt, mix thoroughly and then return to the plate to cool comletely. Then break apart and store in an airtight container. The nuts should keep for a week or two, if they last that long.........enjoy =)
