Sometimes we make poor choices in life. Like, for example, sometimes we choose to give up all our favourite foods at the exact time that we have a big project due!!!!
'That's alright, we don't have to get along with everyone all the time!'
Thanks disembodied children's TV voice of encouragement in my head................................. oh dear!
The problem appears worse than I originally thought.
In times like these it's necessary to find something a little sweet to restore balance in the world.







Double chocolate chip pancakes to the rescue!! These pancakes are based on the protein pancakes by the Tone It Up Girls but with a few minor alterations. These pancakes actually contain Whey protein instead of brown rice protein. I've cooked previously with brown rice protein but I've found that I hate the taste of the protein that the recipe becomes an exercise in covering the horrible flavour. It also means having the massive 5Kg bag for nothing but baking, which really doesn't work for me. My boyfriend uses the Whey protein below so I've been experimenting with whey protein baking.





Double Chocolate Chip Pancakes

1 Banana chopped
2 tsp almond butter
1 tbsp Milk/Almond milk
6 egg whites
2 tbsp Oat flour
2 scoops of chocolate whey protein (or normal whey + 2 tsp cocoa powder)
chocolate chips to taste

1 - Mix everything, except the chocolate chips, together in a blender
2 - Heat a frying pan and spray with one-cal spray or the like. Then pour on little circular pancakes.


3 - Pour in your chocolate chips to taste


4 - Now with a teaspoon add more mixture to cover the chips, or else your chocolate will burn




5 - When the bubble in the batter look firm, flip and cook on the other side




6 - Then remove and repeat until done. Recipe makes c.6-7 pancakes. Now enjoy your guilt free pancakes with something a little naughty, nutella anyone??



They are fluffy and delicious inside, but be careful or people might try and steal them as you're photographing.....
