Healthy Mother's Day Breakfast ideas
So this coming weekend is Mother's Day in the states, not here - here it's in March. However I always remember Mother's Day in the states because it's usually the same weekend as my birthday. So since it's my birthday week I decided to make myself some delicious breakfasts and then thought - wouldn't this make an interesting idea for mother's day breakfast in bed too. So you might say to me, but Cat - Mother's Day is a treat it doesn't need to be healthy and if you want something naughty for your mum I would suggest this cinnamon and nuts twist. However, what if your mother is a fitness fanatic, or what if the mother in your life is your wife who has recently given birth and is working on the baby weight, wouldn't it be nice to be able to provide a delicious special treat that won't hurt her wasit-line or cholesterol.
The first is a healthier version of the cinnamon nut bread. Using the same time saving techniques
Health-ish Cinnamon Nut Bread
1 Can of Dough
2 tbsp Organic Almond Butter
25g chopped almonds
25g chopped pecans
2 tbsp Stevia
1 tsp Muscovado Sugar
2 tsp vanilla extract
2 tsp Apple sauce/almond butter
1.5 tsp ground cinnamon
1/2 tsp nutmeg
1 egg
1 tsp icing sugar
1 - Take your can of dough, open and unroll your dough
2 - Heat the almond butter, apple butter, sugar, stevia and vanilla extract together
3 - Spread the paste, nuts and spices onto the dough and then roll up again.
4 - Beat the egg to make an egg wash, then use this to seal the edge before flipping , so that the seam is on the bottom. Now brush the egg wash over the top and bake for 15-20 mins.
5 - Remove from the oven and cool on a wire rack before sprinkling with the icing sugar ans serve.
But what if your mum is gluten-free?! Don't worry I got you covered. How about this delicious granola.
Delicious Almond and Hazelnut Granola
1/2 Cup Whole Rolled Oats
1/2 Cup Porridge Oats
50g linseeds
50 g sliced almonds
75g whole hazelnuts
1 tbsp almond oil
1/2 tsp almond butter
2 tbsp organic honey
1 tsp vanilla extract
1 - Preheat your oven to 180'. Then pour out the oats onto a silicone lined cookie sheet.
2 - Cover these with the linseeds, almond flakes and whole hazelnuts
3 - Toast in the oven for 5-10 mins
4 - Heat the honey, almond oil, and almond butter together until runny and combined.
5 - Remove from the heat, add the vanilla extract and then add the toasted oats and nuts
6 - Mix until everything is glistening and then return to the cookie sheet and return to the ovn for 5 minutes
7 - Remove and put on a sheet of parchment paper on a cool counter to chill. Then eat.
8 - Delicious served with yoghurt and berries.
You can change the nuts and seeds for your preferred choice. Then just serve to your mum with a smile. You could also make her a present of the rest of the granola as it will keep in an air-tight container for a few weeks.
